2 On the Go Recipes for a Day Out on the Water

When you’re heading out for a day on the water, you want recipes that are quick, easy, and portable. Even better if you can assemble and prep it in advance so that when you’re feeling hungry on your new or used boat, you can just grab and eat. No utensils needed! Here are a couple great on the go recipes you can take with you out on the water.

Mini Quiches

If you’re getting an early start, make a batch of mini quiches before you hit the water!

On the Go Recipes

Ingredients:

  • 1 package storebought pie crust, unrolled and flat
  • 6 eggs
  • ½ cup heavy cream
  • ¼ tsp salt
  • Dash of pepper
  • 1/2 cup diced ham
  • 1/3 cup shredded Swiss cheese
  • 1/3 cup shredded Cheddar cheese
  • Cooking spray

Directions:

  • Preheat oven to 375 degrees F. Lightly coat a 24-cup mini muffin tin with cooking spray.
  • Unroll the pie crusts and use a 3” round cookie cutter to cut smaller rounds. Press a mini circle into the muffin cups of the tin.
  • In a bowl, whisk together the eggs, cream, salt, and pepper.
  • Evenly divide the ham and cheese across each of the prepared muffin cups.
  • Pour the egg mixture into each cup until it’s about 2/3 full.
  • Bake 20-25 minutes or until tops are golden brown.
  • Enjoy!

Taco Wraps

These tasty and hearty taco wraps are a crowd pleaser!

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 box Spanish rice mix
  • 1 can black beans
  • 6 softshell tortillas (number may vary based on size of tortilla and the amount of filling

Directions:

  • Prepare Spanish rice according to package directions, adding in the black beans to the pan.
  • Brown the ground beef, draining and discarding the fat. Add the taco seasoning and water according to the package directions.
  • Spoon even amounts of the rice & bean mixture across the tortillas. Top with even amounts of the ground beef.
  • Roll tightly into burrito form. Enjoy!
